Set in the peaceful village of Batizovce between Poprad and the High Tatras, Gašperov mlyn is one of Slovakia’s most iconic fine dining destinations. This historic building was once a functioning mill, and its architecture, atmosphere, and spirit of craftsmanship still echo its past. Guests come here for an authentic experience, the feeling of warmth and peace within the interior with original wooden beams, works of art, and a central fireplace with a glowing fire. The small number of tables ensures a private and intimate atmosphere. The kitchen is led by Chef Jozef Breza, whose distinctive style is paired with a profound humility. His philosophy honours the surrounding nature and the ingredients, often sourced from the restaurant’s own garden, which he treats with utmost respect, maximising their potential. Each course is personally introduced at the table by the Chefs, who explain the origin of the ingredients, their combinations, and the methods of preparation. This interaction is an integral part of the experience. Wine and non-alcoholic pairings alike are curated by co-owner and expert sommelier Slávka Raškovič, forming a seamless part of the evening. The roughly thirteen-course tasting menu changes according to seasonal availability, with a strong emphasis on vegetables and herbs from the surrounding meadows, such as borage. Freshwater fish from Slovakia, goat, lamb, and Mangalica pork are treated with careful attention to their natural qualities and the craft of cooking, ensuring that each ingredient is clear and expressive in every bite, leaving a lasting impression on the guest. A visit to Gašperov mlyn is a celebration of flavours rarely found elsewhere, a tribute to nature, and a pause in time, allowing guests to surrender to the quiet magic of the moment within the comforting embrace of the mill.
