The château hotel is undoubtedly a landmark of the entire Novohrad region. Its majesty and meticulous restoration are truly breathtaking, and within its walls it conceals several treasures. A distinctive genius loci, historic yet luxuriously appointed rooms and suites, a wellness area, leisure activities, a cigar lounge, and the Rosalia restaurant. The impressive glass-covered atrium, which spans the château courtyard, creates a generous dining space where guests are welcomed by an exceptionally professional yet genuinely friendly service team. A fine way to begin is with the excellent pheasant consommé, particularly appreciated during the colder months. The meat roulade served in the broth offered a pleasant alternative to the more common diced or pulled meat. The main courses, however, would have benefited from greater sophistication and a more creative presentation, while the cod also lacked slightly more seasoning. The duck stood out for its pronounced flavour, with the thyme-infused duck jus and pickled beetroot with raspberry vinegar providing a refreshing touch compared to the classic accompaniments usually served with this dish. And finally, the best at last: desserts from the hotel’s own patisserie rank among the most highly regarded in the region. This was convincingly demonstrated by the striking chocolate sphere with caramel glaze and fresh fruit. The sweetness of the caramel contrasted beautifully with the acidity of the fruit, while the delicate Chantilly cream and high-quality Belgian chocolate elevated the evening into a memorable experience. Thanks in part to the excellent service, minor shortcomings in the kitchen are easily overlooked.
