Approximately eighty-five metres above the ground sits an iconic UFO-shaped restaurant that truly transports you to another universe. With Bratislava spread out beneath you, your visit offers not only breathtaking city views but also an exceptional gastronomic experience. UFO has enormous potential, and not every Chef can meet the expectations that such a unique setting brings. Jozef Masarovič, a leading figure in modern Slovak gastronomy, has achieved it. He builds the menu piece by piece, playing with textures and shapes, and uses every ingredient down to the last crumb. Such precision, artistic presentation on the plate, and, above all, perfectly balanced flavours are a rare experience. A small doughnut filled with foie gras, accented with cherry and mustard seeds, impresses from the very first bite. Morels, egg, and pirôžky stuffed with oxtail and truffle? This is how autumn can appear on a plate: a flawless starter that delights not only the eye. The play continues with a pea variation. Every spoonful of pea velouté is a delight, and peas roasted over embers will completely change your perspective. The main course pays homage to one of Slovakia’s finest freshwater fish, the zander, gently placed in a foam and topped with flowers and mounds of parsnip purée. The signature dessert consists of quark balls under a sugar glass dome adorned with flowers. If sticky sweets are not your favourite, it might be slightly distracting, but it does nothing to diminish the quality, flavour, or unmistakable surprise of reimagining a classic for the 21st century. The Chef’s effort and skill are supported by impeccable service and an enhanced wine list with a generous selection. Currently, after the closing of our evaluation, even the entrance to the restaurant has been adjusted to a decent level, so UFO has a chance to become one of the absolute top of Slovak gastronomy.
