We suggest beginning with the smoked eel, prepared with care and full of flavour. For the main course, the sturgeon was wrapped in a marinated cabbage leaf that preserved the fish’s structure while adding a subtle earthy note. Sautéed young cabbage contributed a smoky dimension, while a scattering of microgreens and edible flowers enhanced both the visual and flavour profile, complemented by a green crisp. Caramelised brown cauliflower purée was bold yet delicate. It was a fine example of how ordinary vegetables can be treated as premium ingredients. The beurre blanc sauce with caviar, drawing inspiration from Norwegian sandefjordsmør, perfectly unified all the elements. Dessert, a white chocolate cream, resembled art on a plate. If the restaurant’s service staff were to improve the attentiveness and empathy towards customers, it could easily rank among the country’s very best.
