Only a twenty-minute drive from the capital, Mlyn 108 is a hidden gem of Slovak gastronomy located in Modra. A whole new world awaits behind the door of an unassuming old mill building. The genius loci of this establishment is unmistakable. The owner greets guests at the entrance and personally guides them through the experience. The kitchen is led by co-owner Otto Chrapčiak, who, together with his team, focuses on uncompromising quality, seasonality and local ingredients and presents their craft through distinctive flavours in a pleasant, countryside-like atmosphere. A bold sturgeon broth with pronounced notes of coriander and fennel offers a fusion of Slovak ingredients, Hungarian techniques, and a subtle hint of Asia. The milk-fed pork back, with its tender meat, crispy skin and bold thyme demi-glace, created a perfect harmony of flavours. Potato puree and crunchy elements from pickled mustard seeds further enhanced the experience. It is a pity that the dessert selection is limited, and the one we tried was slightly overcooked. Nevertheless, Mlyn 108 is an ideal destination for gourmet diners with plenty of time to savour the experience. Thanks to the wide selection of wines, it is time very well spent.
