A gourmet experience in Liptov, outside of all the towns, just by the roadside? Motorest Gombáš proves that “where there is a will, there is a way”. For several years now, it has been delivering quality, based on farm produce sourced from local suppliers. Situated on the main route between Žilina and Ružomberok, in the village of Hubová, the alpine-style hotel houses the Gombáš restaurant. The interior is functional and airy, with an abundance of wood and a selection of cookery books by well-known Chefs displayed at the bar, subtly signalling to their guests the kitchen’s sources of inspiration. The seasonal menu focuses on traditional Slovak dishes, prepared without reliance on ready-made products. A relatively concise offering, complemented by a few options for travellers, is likely to appeal to many passing through. Highlights included an excellent kapustnica with a pleasant acidity, ideal for warming up, and pork cheeks accompanied by fermented elements that balanced the rich, compelling black beer sauce. The steamed bun, however, was a pleasing highlight, served with white chocolate sauce, balanced by a fresh raspberry coulis and a sweet-and-sour plum jam. If your journey through Liptov happens to bring you this way, it is well worth stopping in.
