POETREE’S restaurant is the latest addition to Slovakia’s fine dining scene. Under the leadership of experienced Chef Igor Janiga, Hotel Permon in the High Tatras brings exceptional quality, creative presentation, and service that meets the highest standards. From the seventh floor, the restaurant with its open kitchen and extensive wine cellar offers breathtaking views of the surrounding nature. The magic does not happen only beyond the windows but also through impeccable service focused on the individual needs of each guest. The five-course tasting menu began with a welcoming selection of house-made sourdough bread, gluten-free flaxseed crackers and house-made butter. The five courses that followed were united by fresh, local ingredients, some of them sourced directly from the restaurant’s own farm. At times, we felt that less would have been more, and that in certain dishes a slight reduction in the number of components would have been beneficial. Particularly memorable was the perfectly cooked pike perch with roasted courgette, browned butter and an excellent pumpkin purée with a tangy ponzu gel. The potato accompaniments to the main course of beef shoulder were equally impressive. Mashed potatoes with truffle, served in a fried potato spiral, felt like a true tribute to this humble ingredient. In addition to the five-course menu, the restaurant also offers a nine-course tasting menu, both available with wine or non-alcoholic pairings. A thoughtful highlight was the option to order, alongside a traditional espresso and dessert, a vacuum pot coffee from a local roastery. POETREE’S restaurant is a destination for true gourmets, well worth combining with a stay at the hotel, which offers excellent accommodation and above-standard wellness facilities.
