The sour cream-based stew with a rissole and egg evokes childhood memories while being presented in a contemporary style. Finished with fresh dill and crispy onions, it added an extra layer of flavour. This is the kind of dish that alone makes a visit to Prešov worthwhile. The pho bo is a Slovak interpretation of the well-known Vietnamese classic, with a lighter, slightly sweet broth.
