Koliba na Vršku, a family-owned restaurant in Bytča with its own parking, sits conveniently by the road while remaining perfectly suited to recreational cyclists. It is an attractive, elegant building set in well-kept surroundings with plenty of greenery. The interior draws on the traditional koliba style, interpreted in a more contemporary way. The restaurant’s defining feature is its grand entrance hall with lofty ceilings, complemented by a charming terrace during the summer months. During the week days, a lunch menu is served, while the Chefs regularly refresh the à la carte menu, which is further enriched by seasonal offerings. The wine list is short but perfectly adequate for a restaurant of this kind. The staff are one of the koliba’s greatest assets: well organised, friendly, unpretentious, and consistently professional. We were particularly intrigued by the combination of modern sous-vide preparation of pork tenderloin with a herb crust, paired with traditional bryndza-filled dumplings. The tenderloin was technically well executed and juicy, though it would have benefited from a touch more salt. Suitable for everything from business lunches and family gatherings to a deserved refreshment break following a cycling trip, the restaurant comes highly recommended.
