What could be more traditional than a Slovak koliba? Dishes based on the recipes of our ancestors can be found even in the heart of the capital city. Koliba Kamzík offers ample space for guests to immerse themselves in typical Slovak cuisine, accompanied by an excellent selection of Slovak wines. The interior design, reflecting Slovak folk architecture and spread over two floors, together with professional staff with strong language skills, ensures a pleasant experience. Classics such as pirohy, bryndzové halušky or šúľance, as well as seasonal dishes like duck or game, are prepared honestly and in accordance with traditional recipes, while still incorporating a touch of creativity, new textures, and contemporary culinary techniques. The well-seasoned kapustnica was reminiscent of Christmas. Their version, with excellent sausage, prepared without cream, is slightly more sour and comes with bread to indulge in. Pirohy filled with duck meat struck the right balance between tradition and modernity, enhanced by crunchy onion and green oil. However, the dish would have benefited from a slightly bolder seasoning, particularly with regard to salt – which is quintessential in Slovak cuisine. The house-made šúľance with ghee was noticeably sweet and could have been cooked a little shorter. Overall, if you are looking for something traditional to eat while exploring Bratislava and you would like to discover Slovak cuisine from a slightly different perspective, Koliba Kamzík is well worth a visit.
