New Chef Colette Max has mastered sauces and creams that are essential for French cuisine, even being only twenty years old. We started in classic fashion with snails, perfectly seasoned with parsley, and served with toast, foie gras, quince, and a Tokaji wine gel with hazelnuts. This was followed by an excellent duck with a reduced sauce, mushrooms, and a creative add-on of kimchi. For the second main course, a delicious catfish with sabayon and a distinctive blood orange sauce. To finish, we enjoyed an excellent dessert, Granny Smith apple sorbet with parsley and lemon balm, accompanied by a sweet crisp to add texture. The combination of familiar ingredients, precise technique, exceptionally attentive service, and beautiful design make Colette the perfect spot for a passionate date, a meeting with friends, or simply a moment to savour a touch of French nonchalance.
