Cafe Sissi

Located in the lower part of Trenčín’s main square, slightly removed from the city’s main bustle, the sensitively restored Hotel Elizabeth draws on the story of the city’s most prominent landmark above it – Matúš Čák Castle. The experience is enhanced from the very beginning by a warm and attentive welcome from the service team. At Café Sissi, the kitchen is led by Daniel Marek, known for his work with local ingredients and his mastery of demanding culinary techniques. He skilfully combines contrasting flavours, creating bold and intense gastronomic experiences. That said, we do believe that less can sometimes be more, and a few of the international elements could be omitted without detracting from the overall result. A ceviche made from Slovak fish, paired with a pronounced lime gel and guacamole, was further enhanced by crisp and acidic components, softened by a delicate sour milk sauce. The fish flavour was elevated by caviar, while a salted rice crisp added a pleasing textural contrast. A high-level interplay of flavours, techniques and textures. The intensity continued with the main course. Tender, juicy chicken breast was served with a robust smoked sauce, potato purée topped with crispy onion and oil, and pickled baby carrots providing a welcome acidic note. Pastry skills came to the fore in the dessert: panna cotta with white chocolate ganache, delicate meringue, rosemary-infused vanilla ice cream and sharp, refreshing accents in the form of redcurrants and a bold cranberry sauce.
