BISTRIC Restaurant

BISTRIC brings together nature, tradition, architecture, delicious food, wine, and community – all of which lie at the roots of the region – and the restaurant has translated these values not only into its logo but also into its menu. These are the elements on which it builds its identity, guided by the motto “add an extra value”. They grow their own herbs, ferment vegetables, and age meat in specialised facilities. The menu is rich in flavours and textures. A small, playful dish to start with: a langošík with pickled trout, horseradish, and redcurrants offers an unconventional combination of flavours that works surprisingly well. Despite the horseradish, the trout was not overpowered, and the redcurrants awakened the taste buds. The often-underestimated polenta retained a touch of crispness, and together with a perfectly prepared pork chop with tomato and chipotle jam, it carried distinct notes of open fire. A doughnut filled with quark cream, salted caramel, pickled plums and roasted white chocolate was a modern variation of a traditional Slovak dessert and a clear example of how BISTRIC approaches tradition: with a contemporary perspective and flawless execution using the best possible ingredients. Here, roots are not just a metaphor. The restaurant places strong emphasis on locality and quality, not only in its food but also in its wines, and it is well worth visiting even beyond the historic city centre. The service is attentive and professional, although we occasionally missed a more detailed presentation of the dishes when they were served. BISTRIC is an excellent choice for a family celebration, an experiential tasting dinner, or a romantic date for two.
