Apolka in Bratislava brings together traditional Old Bratislava cuisine with a sense for modern gastronomy, located in an industrial-business district near Mlynské Nivy. Housed in the former historic refinery building, the restaurant has a distinctive character. The interior is tastefully designed, modern, elegant, and comfortable, which is highly appreciated. The menu is based on ingredients sourced from local farms, with emphasis on seasonality, detail and uniqueness. The staff are professional and approachable; however, their knowledge of food and wine could be improved. The wine list itself would benefit from more attention. Apolka is well suited for family gatherings as well as business lunches. The quail leg cooked on straw was clearly prepared by an experienced Chef, yet the dish lacked harmony to some extent. While the meat was excellent, as was the chestnut puree, the roasted celeriac was slightly too firm, and the jus was a bit runny and lacking in flavour. The duck broth, on the other hand, was rated positively, particularly the rillette wrapped in a leek leaf used as a garnish. Unfortunately, the carrots were slightly undercooked. The star of the day was the cottage cheese dumplings filled with plums and apricots, a tasty and generous dessert that felt just right. Made from house-made dough and served with chocolate sauce, it was beautifully presented. If you are looking for a restaurant where the tradition meets not just the nostalgia but also the innovation, while paying true tribute to quality ingredients, Apolka is a great choice.
