Chef Marek Karaka has been cooking for eight years in his small, cosy restaurant, Alej, located in the centre of Bojnice. With the town’s beautiful romantic château in clear view, Alej is an obvious stop for tourists, but the honest cooking based on high-quality, seasonal ingredients makes it well worth a special trip, even if only for lunch. The restaurant is open just four days a week and clearly prioritises quality over quantity. There are only a handful of tables inside, a few more on the terrace, and in the kitchen it is a true one-man show. The same philosophy applies to the menu: just a few dishes, but each one technically precise and thoughtfully executed. Operating on a zero-waste principle, the restaurant simply closes once the food is sold out, so making a reservation is highly recommended. The menu changes weekly and features bold interpretations of Slovak cuisine – think pork cheeks, traditional stews and game – handled with confidence and flair, alongside genuinely excellent steaks. If you manage to visit outside peak hours, Marek Karaka is often happy to share insights into his cooking. He is frequently joined by his wife in the restaurant, and the service is among the warmer and more attentive you will find. Thanks to the intimate interior and, in the colder months, the wood-burning stove, you will feel very much at home.
